The Amarone vinegar, difficult and long to make, is an ancient custom of the Rizzardi home. Produced from the prestigious wine Amarone della Valpolicella, it has a mother dating back to the beginning of the last century. It ages for ten years in ten barrels of different sizes and qualities of wood: in fact, it passes from oak to pear, apple, cherry and almond. Passing from the largest to the smallest barrels, it becomes more and more refined and is added in varying proportions to the Amarone vinegar of the previous year.
